At around level 30+ when you beat normal mode. Dont worry about stat points and skill points. You only get to reset your stats 3 times for free before you have to grind to do it again. The very first quest allows you to reset your stat points.
Stats are usually distributed into strength/dexterity enough to just wear gear(weapons/armor/etc) then dump everything else into vitality for HP Each increasing difficulty opens up the loot pool with hell mode areas opening up everything. Once you beat a mode it will put you in the next.
